Koks Restaurant is widely regarded as one of the best restaurants in the Nordics. Having won several awards and received 2 Michelin stars, KOKS Restaurant offers a complete gastronomic experience. In 2015, the restaurant won the prize for being the best restaurant in the Nordics. 

The head chef for KOKS restaurant now is the culinary coquetry, Poul Andrias Ziska, who has headed the restaurant for the past many years and led it to its recent successes.

On their website, KOKS writes:

“As KOKS’ head chef, he masters the artistry of distilling taste and smells from the Faroese landscape, combining them in exquisite dishes. The palate is local, uncompromisingly Faroese.”

KOKS Restaurant – First Faroese Michelin Restaurant

The Faroese restaurant and gastronomic scene have improved significantly in recent years. Indisputably, the pioneer for this development is KOKS, which opened in 2011. The chef behind the restaurant was Leif Sørensen – still one of the most renowned and innovative chefs in the Faroe Islands.

In 2017, KOKS restaurant received its first Michelin star. In 2019, the restaurant received an additional Michelin star, so that today KOKS is a 2-star Michelin restaurant and a holder of the Sustainable Gastronomy emblem, also.

Experimenting with Faroese Cuisine

Focusing on experimenting and innovating with traditional Faroese cuisine, KOKS restaurant provides travellers with the chance to taste the Faroe Islands from both a traditional side, but also an alternative daring side.

On their website, KOKS writes:

“The young avant-gardes at KOKS use Faroese produce, both coarse and fine, ancient and modern, always keeping an eye on sustainability, leaving the hills that bring forth the good fruit to flourish.

Rather than chasing the novel for its own sake, every effort is put into exploring the ancient practices – drying, fermenting, salting, and smoking.”

Most of the produce used in KOKS is local Faroese. When local is not an option, KOKS sources produce from other Nordic countries. The produce used at the restaurant mainly stems from lamb, fish, birds, local greenery, and seaweed – see our blog “Wildlife in the Faroe Islands” to learn more about the different species in the Faroes.

The chefs at KOKS also use the ancient culinary techniques of fermenting both lamb and seafood (“Ræst” in Faroese). Additionally, the chefs use the ancient techniques of air-drying the lamb and fish, e.g. to serve the local favourite of dried lamp or “skerpikjøt” in Faroese.

Hence, when dining at KOKS, travellers can expect to be served both traditional Faroese favourists such as dried lamb “skerpikjøt” and fermented fish “ræstan fisk”, in addition to other more modern inspirations. 

Eating at KOKS Restaurant

We always recommend our travellers to eat at KOKS restaurant. We recommend our travellers to book their travel early with us to get a table at KOKS, as tables are very limited. While we cannot guarantee it, we are usually able to get a table at KOKS restaurant for our clients.

KOKS restaurant is situated deep in a valley on the island of Streymoy. The scenery around the restaurant is dramatic, and to get to the restaurant, Travellers will be picked up by SUVs that take them to the restaurant.

When eating at KOKS, travellers can choose between a wine pairing menu or juice pairing menu, and the serving sizes vary and sometimes go up to 19 servings, per person.
